RO Hospitality, the restaurant group behind several popular North Fulton restaurants is slated to add a fourth concept to its roster.

Casa Robles is set to open in Spring 2022 at 45 Oak St. in downtown Roswell. The space was previously home to the Whiskey Project, which announced over the summer its planned to move to Crabapple. Before that, it was Oak Street Cafe.

The restaurant will feature “traditional Spanish tapas with bold Latin American influences” according to a press release.

Brothers Daniel and Ryan Pernice, the RO Hospitality restaurateurs behind Roswell restaurants Table & Main and Osteria Mattone, and — with chef-partner Woolery Back — Coalition Food and Beverage in Alpharetta, will own and operate Casa Robles, which translates to “oak house.”

In addition to a selection of Spanish dishes, the menu will also offer dishes that “showcase the evolution of traditional Iberian flavors combined with Latin culinary traditions, spices, ingredients, and preparations,” including tacos from Mexico and pupusas from El Salvador.

The kitchen will be overseen by chef and El Salvador native Laura Orellana, who trained in Seville, Spain. A 10-year veteran of RO Hospitality, Orellana currently serves as executive sous chef at Osteria Mattone.

Daniel Pernice, a sommelier, will oversee the restaurant’s beverage program, with a focus on “robust, bold wines” and affordable boutique wines from Spain, Portugal and across South America. The cocktail selection will feature drinks that “give rum, tequila, mezcal and pisco as much room to shine as gin, vodka, or whiskey.”

The Casa Robles space is being designed by Roswell firm Randall-Paulson Architects.
