A restaurant specializing in pho and other Vietnamese dishes made with barbecued meats is poised to open in Glenwood Park.

Pho Cue will open at 5 p.m. Nov. 3 at 925 Garrett St. in a space previously occupied by Festivals Jerk Chicken Grill, with neighbors including Kevin Gillespie’s Gunshow and recently opened Vesper Bar.

The eatery comes from Julian Wissman and Brian Holloway, who started Pho Cue as a pop-up in August 2020. Wissman, who previously worked at Atlanta’s Fox Bros. BBQ, said the pop-up portion of the business will continue to operate in addition to catering.

Pho Cue’s menu includes a selection of “appys and snackys” like smoked brisket egg rolls and “biggies” like pho bowls and banh mis, made with a choice of house-smoked brisket, pork or chicken (the proteins are also available by the tray and by the pound).

“The bones” portion of the menu includes a rack of ribs and chicken wings with flavors like lemongrass pepper wet. Look for sides such as mac and queso and cheesy French fries, with two “veg bowls” for vegetarian customers (Wissman said more vegetarian recipes will be added to the menu in the coming months), as well as daily specials.

The restaurant will also offer a full bar with several cocktails, wine and a selection of mostly local beers.

As a nod to Pho Cue’s pop-up roots, Wissman has plans to open the restaurant’s kitchen on Mondays, one of its off days, to other local pop-ups.

Designed by Storey Time Construction, the space features a bar with a “charred wood look,” Wissman said, with the walls painted in light greens. The bar seats 13, while the dining room seats up to 48. Sidewalk tables provide 16 seats outside.

Pho Cue’s hours will be 11 a.m.-close Wednesdays-Sundays. In addition to dine-in service, Pho Cue will also offer takeout, with plans to offer delivery at a later date.
