Atlanta chef and “Top Chef” star Kevin Gillespie is partnering with Docent Coffee co-owners Nolan Hall and Jeff Richards on a new cafe on the Eastside Beltline.
Docent x CB will debut Oct. 16 in the walk-up bar area under the covered patio at Cold Beer, Gillespie’s Beltline restaurant. The concept will serve Docent’s full coffee and tea program, in addition to a menu of grab-and-go breakfast and lunch items by Gillespie and his team.
Docent’s coffee offerings include drip coffee, espresso, americanos, cortados, cappuccinos and lattes as well as specialty drinks like frozen iced coffee and a boozy Irish coffee slushie. Docent x CB will also serve Cold Beer’s selection of beers.
All-day breakfast dishes include a bacon waffle wrap with salted pecans and apple butter, cinnamon rolls and a chicken chorizo breakfast burrito. For lunch, look for options like items like paninis and Gillespie’s popular C.O.S. (Closed On Sunday) Chicken Sandwich.
Though Docent x CB is geared toward the grab-and-go crowd, seating will be available on Cold Beer’s patio and beer garden.
Docent has been providing coffee to Gillespie’s restaurants since 2019. A Docent Coffee shop that opened on Edgewood Avenue in Old Fourth Ward in 2018 has closed, but the business continues to sell its coffee to local eateries and online.
“Docent’s approach to coffee is almost the same as mine with food,” Gillespie said in a prepared statement. “So it just made sense to work with each other to bring something different to the Beltline. We both feel that great coffee and great food shouldn’t be relegated to just snobby slow-serve establishments.”
In addition to Cold Beer, which opened in 2019, Gillespie’s Red Beard Restaurants also operates Gunshow in Glenwood Park, Revival in Decatur and Ole Reliable in downtown Atlanta.
Docent x CB’s opening hours are 7 a.m.-2 p.m. Wednesdays-Fridays and 8 a.m.-3 p.m. Saturdays-Sundays.
