The Silver Dragon restaurant in Conyers failed another routine health inspection, and the inspector noted there was insufficient managerial control over food safety.

Certification for the food safety manager had expired in January. Preventing food-borne risk factors requires active managerial control, the Rockdale County health inspector said.

During the inspection, potentially hazardous foods were stored on the prep table at room temperature. Multiple food items had expired but were still on shelves and in coolers. Numerous live flies and roaches were observed in the kitchen. And the entire kitchen needed a thorough cleaning, top to bottom, the inspector said.

Silver Dragon, 1889 Highway 138, Conyers, scored 59/U on the routine inspection. Previous scores were 75/C and 47/U.

Raw eggs were stored at room temperature without any time controls, according to the inspection report. They were discarded. A large container of rice was also thrown away because the food had not cooled quickly enough to prevent contamination.

Raw chicken was thawing at room temperature and was relocated to a cooler.

The restaurant had repeat violations of excessive grease and food debris on non-food contact surfaces. The inspector said the facility needed cleaning, including floors and walls.

The inspector also said the back door, which was wide open during the entire inspection, should be kept closed to prevent pests and rodents from entering.

Silver Dragon will be re-inspected.
