Food services at a Buford assisted living community recently failed a health inspection when management didn’t do enough to prevent violations associated with food-borne illnesses.
Points were taken off because of the potential for cross-contamination and because some of the equipment and surfaces were unclean.
Also, employees were changing gloves during food prep, but not washing their hands in between changes, the inspector said. One employee entered the kitchen and began to scoop ice into a pitcher without first washing hands.
Brookdale Buford, 4450 Old Hamilton Road, scored 60/U on the routine inspection. The facility had previous scores of 97/A and 100/A.
Apples available in the dining room for self-service by residents were stored with no shielding or other protection from contamination, the inspector said.
Flour being used to batter raw fish also came in contact with bread and other food items on the prep table.
Raw, unwashed vegetables were stored above ready-to-eat foods. A package of cooked sausage was stored directly on top of a box of uncooked turkey sausage. A bag of chicken was in contact with a package of raw beef. All of the food items were rearranged in the cooler.
Equipment, such as manual and electric slicers, food processor parts, microwave and storage containers all had food residue. Other clean utensils were stored on a surface that was dirty with food residue.
The hand sink had no paper towels, and was being used improperly. An employee used the sink to fill a pitcher with water when making lemonade.
Brookdale will be re-inspected.
