VIDEO: Here’s what the liquid on top of your yogurt is

If yogurt is one of your favorite snacks, you’ve probably wondered about the liquid that sits on top when you peel off the cover.

It’s called the whey separation defect. It happens when the gel structure of the yogurt becomes unstable and shrinks, forcing the watery fluid to appear.

Although some companies use a stabilizer to prevent the separation and some folks opt to pour out the liquid, it’s not so bad to keep it in.

That’s because it’s a substance called whey, one of the main ingredients in milk that’s full of protein.
