My husband and I love the mushroom soup at Chicago's on Shallowford. We would really like to make it at home for company because it's so unique and delicious with the puff pastry top. We would be very grateful if you could get the recipe. Thank you. —Karen and Bob Schultz, Marietta
Oscar Galan, 17-year veteran executive chef and proprietor of Chicago’s Steak and Seafood suggests that their bowl of soup even looks like a mushroom with its puff pastry crown. The soup itself is very rich and could stand alone without that pretty puff pastry topping. As a matter of fact, you could make a gourmet green bean casserole for Christmas if you substituted this for that sad can of cream of mushroom soup.
Chicken base is available in the soup aisle of your grocery store and the restaurant likes Pepperidge Farm puff pastry for the flaky top.
