Q: I recently met a friend for lunch at Cowtippers. I have eaten there with some regularity but had never tried the braised greens until that meeting. They were superb! I described them as sweet/hot and perfectly cooked and seasoned. My husband and I grow lots of various types of greens in our garden every year and have tried them many ways. A: Ken Storr of Metrotainment Cafes, owners of Cowtippers, as well as eight other restaurant concepts, including Einstein's, Guaco Joe's, Hudson Grill, Joe's on Juniper and Sugar Shack, sent us this recipe, scaled down from the much larger version prepared at Cowtippers. Prepare it and you'll have plenty of greens and lots of delicious healthy pot liquor.
Cowtippers’ Braised Greens
14 cups water
4 pounds turnip greens, stems removed, cleaned and chopped
5 cups diced canned tomatoes (about 2 1/2 14.5-ounce cans)
1/2 large onion, cut into 1/4-inch dice (about 3/4 cup)
3/4 cup granulated sugar
3/4 cup apple cider vinegar
3 tablespoons hot sauce
4 teaspoons kosher salt
1 1/2 teaspoons black pepper
1 jalapeno, sliced
In a large stock pot, combine water, turnip greens, tomatoes, onion, sugar, vinegar, hot sauce, salt, pepper and jalapeno. Bring to a boil, then reduce heat and simmer 2 hours. Makes: 10 cups greens
Per 1-cup serving: 147 calories (percent of calories from fat, 4), 4 grams protein, 36 grams carbohydrates, 6 grams fiber, 1 gram fat (trace saturated fat), no cholesterol, 1,220 milligrams sodium.
