You don’t have to give up your favorite Chipotle order just because you want to eat fewer carbs this year.

On Monday, the fast-casual eatery announced it’s offering Cilantro-Lime Cauliflower Rice at U.S. and Canadian restaurants for a limited time. The option, a new take on the eatery’s classic cilantro-lime white rice, is its latest plant-based option. Made with freshly grilled riced cauliflower, finished with hand-chopped cilantro, lime, and salt, it’s cooked fresh in the restaurant daily.

“Chipotle fans have been craving more plant-powered, better-for-you options that align with the latest health trends and emphasize the benefits of real food,” Chief Marketing Officer Chris Brandt said in a press release. “That’s why we are thrilled to offer Cauliflower Rice nationally and help our fans achieve their diet or lifestyle goals.”

The cauliflower rice was tested in restaurants in Denver and across Wisconsin as part of the restaurant’s stage-gate process, which allows Chipotle to listen, test and learn from customer feedback, and iterate before deciding on a national launch strategy.

The new option is compliant with Keto, Whole30, Paleo, vegan, and vegetarian diets and can be used in Chipotle’s Lifestyle Bowls, which focus on each of the aforementioned diets.

Choosing the Cilantro-Lime Cauliflower Rice for your burrito bowl, taco, salad or burrito will add $2 to your order. But through Monday, Jan. 11, the Mexican grill is waiving the delivery fee on any U.S. Chipotle app and Chipotle.com order of $10 or more that includes the new menu item. A service fee still applies, however.

This is the newest menu offering Chipotle has provided in recent years.

Last year, the company announced it would sell non-GMO and certified organic lemonades and teas from Tractor Beverage Co. at participating locations. It also revealed a TikTok hack menu, which featured items such as DIY nachos and a taco salad hack.

Cilantro-Lime Cauliflower Rice comes nearly a month after Chipotle announced a holiday capsule collection of Chipotle-branded winter apparel.
