Your typical breakfast biscuit — a grab-and-go option from a fast-food joint or gas station — is pure convenience food, plain sustenance to help you through a busy day. It’s probably the opposite of what comes to mind when you think of a balanced breakfast.

In that case, chances are you haven’t tried the breakfast amber biscuit from Sean’s Harvest Market near Piedmont Park.

This biscuit basically is a self-contained, handheld brunch. It has all the building blocks for a strong start to your day: a fried egg, grilled onions, tomato, a slice of cheddar and apple butter, to go along with your choice of meat or avocado. The lunchy meat options include pulled pork and beef kielbasa, and that’s perfect if your first meal of the day is happening more than a few hours after sunrise. You also can choose to “make it sexy,” i.e., add a spicy sauce for a little zing.

Sexy or not, the real star is the amber biscuit. It’s pillowy, buttery and pleasantly dense. The biscuit holds together well under the weight of the filling and nicely soaks up the egg yolk, sauce and apple butter, yet it’s still wonderfully tender.

That’s a difficult balancing act to strike with a biscuit — simultaneously soft and sturdy — but it makes this breakfast sandwich one to remember.

Even better, Sean’s Harvest Market serves these beauties all day, so you can treat yourself to a delicious, hearty meal, no matter what time you wake up.
